Project # 6 - Spiced Shortbread Biscuits November 15 2015


Even though the months are meant to be warmer here, we still get a few grey chilly days, and I like to fill the house with the lovely cozy smell of baking. This is my altered version of the traditional shortbread, with fresh nutmeg, grated orange rind, and cinnamon.


Ingredients you will need:

250 grams butter

1 cup icing sugar

1 cup corn flour

1+ 1/2 cups plain flour

zest of 1 orange

freshly grated nutmeg 

1 teaspoon ground cinnamon


Mix the butter and icing sugar together until creamy and pale. Sieve in corn flour, plain flour and the orange zest, nutmeg and cinnamon. The mixture will be light and buttery. Roll out the shortbread onto a floured surface and gently slice the shortbread into squares. 

Bake in a pre-heated oven for 180 degrees for 25 minutes - or until the shortbread are a pale/golden colour.
